Olives harvested at ripeness, which are kept for a few days; this is a controlled, managed fermentation. Crushing in accordance with traditional practices. It develops aromas of olive confit, notes of cocoa, mushrooms, vanilla, etc. The bitterness disappears but it may have a slight pungency.
